Feeding cattle has always been part of our business. We pasture cattle in the growing season and when winter comes we serve them a forage diet of stored hay and silage. We use the manure for crop fertilization and soil building and we have started turning it into compost, used to nourish our organic crops.
We are fortunate to live within reach of some of Canada’s major centres of population and we wondered if we could develop a business selling directly to our own customers. We learned from experience and experimentation that meat from animals that live free range in their natural environment, eating their natural diet, is indescribably delicious. We found this to be true for beef, pork, chicken and lamb. Then we learned that beef from cattle raised on pasture, is a healthy natural source of the Omega 3 essential fatty acids, conjugated linoleic acid (CLA) and Beta Carotene.
We found that customers are looking for a natural product raised without the use of growth promoting hormones and antibiotics, whose use had become routine for the commodity beef industry.
We also acquired a deep conviction. When our animals could live almost their whole life on pasture, and during the winter their diet was based exclusively on forages which are biologically in harmony with their ruminant digestive system, they are healthy and happy in a way that was not possible in a confined feedlot pen or a grain diet not in harmony with their biological origins. I feel that we are respecting and honouring these co-inhabitants of the earth and not just exploiting them.
There is more to this story. Our animals come from Ontario. We graze them here later in their lives and manage the movement of the beef through processing and to our customers. The cows and calves are raised by a well known family. They have a shorter growing season but long days. The land grows wonderful rich grass. The surrounding environment is clean. The cows have the shelter of the bush but are never indoors. Calving is timed for the beginning of new green pasture growth. Those cows are not confined or pampered. They look after birthing themselves in the spring, on fresh clean grass, in a place of their own choosing. In case you are wondering about breed, these calves are mostly Angus (a good Scottish breed, well muscled, that thrives on pasture and can fatten on good grass without supplemental grain feeding).
We also find that consumers today want to know where their food is coming from and what is, or is not, in it. Producing Back to Nature Beef is a team effort. One person looks after the cattle on pasture. Another oversees administration. They know a lot more about cooking beef than I do. She has cooked every cut, tested every recipe, and will tackle almost any question you care to ask.
